I left packaged lunchmeat unopened in a bag at room temperature for about six hours. Is it safe to use?
We purchased a cooked spiral ham (not canned) 1 week ago. The 'sell by' date is two months from now. We were planning on eating this in 1 week for Easter. However, I'm wondering if the 'sell by' date is wrong. This seems like a long time for a ham to be good even if it is already cooked.
How long do vacuumed packed meats last thawed in the refrigerator?
If the kielbasa was purchased from the deli then it will be treated like a deli meat which is good for 3 to 4 days. If the sausage is in a sealed package, you need to refer to the best before date but usually it is good for 2 weeks. Once the package is opened use the meat within 3 to 5 days.
You can see in my Handy Storage Chart that fresh sausage made with pork or beef may be frozen 1 to 2 months.
Unfortunately, you will need to discard the lunchmeat. Any perishable foods left at room temperature for more than two hours can potentially contain harmful bacteria. Refrigeration after will not reduce the bacteria.
There are a variety of ham products on the market, and the storage times for each can vary. If this is fully cooked, vacuum sealed at the plant, unopened and dated then the 'sell by' date is the best indicator. If the product was undated then in general terms we would state to use the ham within 2 weeks. Keep the ham refrigerated. To reheat, set the oven to 325ºF. A 7 to 9 lb ham will take approximately 14 to 18 minutes per pound to reach an internal temperature of 140ºF (60ºC).
Thawed, refrigerated meat and poultry should be cooked within two days.

Raw beef steaks may be refrigerated as long as four days after the packaged on date before cooking. If the date is a Best Before Date, the meat should be cooked on or before that date.
There may be some loss of vitamins after freezing depending on how the foods were processed and packaged and how long they were frozen. However, freezing does not kill all bacteria, yeasts and molds present in food, but it does prevent their multiplication if the food is held at -18 degrees C (0°F) or less. When thawed, the surviving organisms can multiply again.
